Potato Skins

Tonight my husband wanted potato skins with dinner. We thought we'd try to make them on our own and were surprised at how easy they are! And they tasted really good, too... better than at a restaurant.

6 whole potatoes
6 tablespoons butter (give or take... I didn't really measure)
About 1-2 cups shredded Cheddar cheese (again, I didn't measure)
4 strips of bacon, cooked and crumbled

Wash and poke holes in potatoes. Bake at 400° for one hour or until baked through.

Slice potatoes in half, lengthwise. Scoop out most of the potato, leaving a shell of about 1/4 inch. Put skins on a baking tray.

Place about 1/2 tablespoon of butter in each shell. Top with a good amount of cheese, covering the entire shell and mounding in the middle (about 2-3 tablespoons- you know... enough that will cause you to feel your arteries clogging as you eat the finished product).

Top each potato skin with crumbled bacon.

Broil on high until cheese is melted and browned, about 4-5 minutes. Watch carefully.

Serve with sour cream and chives.
